Princess Salmon Potato Cakes

My contribution to our family Easter dinner was a new appetizer creation. I used the last of the sockeye salmon I canned last summer (thank goodness sockeye season starts in a month!) These are so easy to make and were a big hit!

Peel, cook and mash one large potato
16 oz canned salmon
1 beaten egg
6 chopped green onions
2 minced cloves garlic
1 tsp salt
1/4 tsp pepper

1 tsp seafood seasoning (I used Epicure seafood seasoning)
Mix all of these ingredients together and then chill for at least an hour. Form mixture into small balls and then flatten into patties. Lightly coat in flour and fry on each side until golden brown. Serve with tartar sauce. Mmmmmmm!

Fish Fiesta

Tonight I prepared my all time favourite way to enjoy salmon (or any fish). My fish tacos are perfection in their simplicity. Because there are very few ingredients in this recipe, the quality is so important. This time I used a tail piece of a Sockeye I caught last summer. Vacuum sealed and frozen shortly after being caught means this fish is still fresh and lovely all these months later. I broiled it in the oven for 6 minutes and then finished it on the stove top with a splash of orange juice and a drizzle of hoisin sauce. The taco are filled with fish, fresh chopped tomatoes, cabbage salad and my secret sauce. Cabbage Salad Dressing: 2tbsp oil 2 tbsp white wine vinegar 2 tsp Dijon mustard 1/2 tsp honey salt and pepper to taste. Secret Sauce: plain Greek yogurt sriracha chili sauce to taste Wrap it all up in some fresh flour tortillas and you have an easy, fun and delicious dinner. These are also much healthier than using the ground beef, sour cream, guacamole and cheese that usually accompany tacos in my neck of the woods. I have made this recipe with halibut, cod and snapper as well as all types of Salmon and I have served them to family and friends of all ages and everyone continues to request them.

A Picture Perfect Day



The three of us explored a new river a couple of weeks ago. We drove two hours to the Gold River to see if there were any winter steelhead hanging around. As with our last few experiences, not only did we not catch any steelhead, we also didn't see anyone else catch any! Despite the lack of fish we had a great time exploring the area. We ventured into some places that were a little more challenging to get to (ie. sliding down rock faces) but this is definitely the prettiest river I have ever fished.


We went to four different area, each one providing more breathtaking scenery than the first. I was not going to blog about this uneventful trip but the pictures of this amazing place are too beautiful not to share.







This trip also provided me the first opportunity to try out my newest fishing jewel. I finally picked up the Shimano Curado reel that I ordered in January. I will have a full review of the reel once I play some fish on it but so far I am loving it!
