My contribution to our family Easter dinner was a new appetizer creation. I used the last of the sockeye salmon I canned last summer (thank goodness sockeye season starts in a month!) These are so easy to make and were a big hit!
Peel, cook and mash one large potato
16 oz canned salmon
1 beaten egg
6 chopped green onions
2 minced cloves garlic
1 tsp salt
1/4 tsp pepper
1 tsp seafood seasoning (I used Epicure seafood seasoning)
Mix all of these ingredients together and then chill for at least an hour. Form mixture into small balls and then flatten into patties. Lightly coat in flour and fry on each side until golden brown. Serve with tartar sauce. Mmmmmmm!
Yummy! My Mom (Dana's Nana) used to make these all the time - we enjoyed them with brown beans or home fries and salad! We loved the home fries better!
